Today, I’m gonna clear out all the leftover ingredients in my fridge with this recipe!
These tiny things that look like grains are called couscous.
You can season it with salt or you can add any spice you like, as I’m doing in this video,
and simply boil in water! It is the most simple pasta you’ll ever meet!
It’s often served with salad in other countries. It’s very healthy!
Today, I’m going for cheesy, slightly spicy vibe.
Throw everything in and stir to combine. All there’s left to do is to boil!
Add two times more hot water to couscous and let it sit for 10 minutes.
You’ll end up with cooked couscous that looks like white rice! Very simple, don’t you agree?
If you don’t follow the exact amount of water specified in this recipe, your couscous might end up like porridge so be careful!
You can also use whole wheat pasta if you don’t have couscous 🙂
These are the veggies that had been stuck in my refrigerator.
You can use any kind of veggies you have or you want with this recipe.
FYI, the chickpeas I’m using in this video had been cooked and stored.
We’re not making puree so pulse them in the food processor!
When they’re chopped, you’re done preparing the veggies!
We’re gonna use one egg to make all the ingredients some together.
I want it to be slightly cheese so I’m adding a half slice of cheese!
Well, it wouldn’t taste super cheesy for the amount I’m using, though.
So, I’m gonna add some nutritional yeast as well to amp up the cheesiness and the overall flavor.
Now you have a cheesy egg mixture ready! LOL
Throw in all the couscous to the egg mixture
and the chopped veggies as well.
Season it with salt and pepper to your taste!
Now all there’s left to do is combine all the ingredients together…!
I suddenly remembered that I had some leftover chicken breast chunks so i threw them in as well.
You can use anything you find when you’re making food to clean out the fridge! (I’m joking)
I took out a slice of whole wheat bread that had been stuck in my fridge as well.
I’m just making bread crumbs for garnish so you can skip this step if you don’t have bread at home!
Pulse the bread in the food processor. Don’t blitz it super fine!
It seems like it’s quite a lot…
Add a tsp of oil to the bread crumbs.
I added a pinch of cayenne pepper powder
and smoked paprika powder that everybody loves!
Use a fork to mix lightly and gently so that it doesn’t become a paste.
The whole wheat bread crumbs are ready!
Now let’s assemble all of them together in a muffin tray.
Scoop some of the batter into each muffin cup.
It doesn’t rise so don’t be afraid to cram it in! LOL
Sprinkle some of the bread crumbs as well…
And a bit of parsley on top.
This recipe will make 5 muffins.
It’s an odd number but, you know, it’s fine. Haha.
I didn’t add much salt to the batter so I put lots of spices to the bread crumb mixture
so if you’re not adding bread crumbs, you should add much more spices to the batter!
If you want some salt, it’s completely okay to add some in moderation!
There’s a variety of spices in stores these days so I suggest you buy some and try them out! It’ll be fun 🙂
Bake them in a 180°C oven for 30 minutes and…
you’ll have these golden brown mufifns!
For a muffin that’s made of leftover ingredients, it looks quite nice, right?
You can use any ingredients you find in your refrigerator,
and if you add cheese, it can satisfy your craving for cheese!
