LIVE IT: Gluten-free Blueberry Muffins


(upbeat electronic music) (guitar music) – [Narrator] This is a really great recipe to get the kids involved in the kitchen for a quick lesson on baking, without getting too technical. Because we’re not using wheat flour with it’s gluten formation requirements, we can just throw everything
in a bowl and mix, it’s that easy. You might have to help
them with the eggs, though. (upbeat pop music) Here’s a little tip for making beautiful blueberry muffins that
don’t turn out all blue. Use frozen blueberries, this keeps them intact while
you fold them into the mixture. One of my favorite
things about this recipe is the incorporation of almond flour, it adds a wonderful nutty taste and a really nice texture. (upbeat music) Did you know, in 1988 the blueberry muffin was named the official
state muffin in Minnesota? Due to third graders, who wanted to honor the wild blueberries and the wheat farmers.

    – 2 cups blanched almond flour
    – 1/2 tsp baking soda
    – 1 tsp baking powder
    – 1/4 tsp salt
    – 1 tbsp vanilla extract
    – 2tbsp olive oil
    – 1/4 cup maple syrup
