Quick and Easy Blueberry Muffin Recipe – How to Make The Best Homemade Blueberry Muffins

We’re Adam and Joanne from inspiredtaste.net and welcome to our kitchen.
We making our favorite blueberry muffins recipe.
Start by heating your oven to 400 degrees F.
Then fill eight muffin cups with paper liners.
There will be four cups left.
Just add a little water to each empty cup.

This way the muffins will bake evenly.
For the dry ingredients, You will need flour…
one and a half cups of it.
three quarters of a cup of sugar…
two teaspoons of baking powder…
and a half teaspoon of salt.
Use a whisk to stir until well combined.
For the wet ingredients…
Add one third of a cup vegetable oil…
to a measuring jug.
Next add one large egg…
then fill to the one cup line with milk.
Add two teaspoons of vanilla extract then whisk.
Add the wet ingredients to the dry.
Then use a spatula to stir the two together.
you don’t need to beat here.
In fact over mixing with make them tough and dry.
Notice the batter is quite thick.
That is perfectly fine.
Now add about one cup of fresh
and fold in…
be careful not to crush the blueberries too much
Now just divide the batter between eight
the cups will be quite full.
Then to add a crisp sugar top to the muffins.
sprinkle a little bit of sugar on top…
just before baking.
Bake in the oven…
for fifteen to twenty minutes…
check for doneness…
by grabbing a toothpick and inserting it
into the middle of the muffin…
and checking to see if it comes out clean.
And that’s it.

  8. I made it last night, the came out good but the blueberry were a little sour and today the muffins don't taste like blueberries just like regular cupcake, do we need to add blueberry flavor? or maybe i will have to add more berries?

  10. I just made this with self raising wholemeal flour (thus I skipped the baking powder), used plain coconut milk instead of regular milk, and used only 100gm of sugar instead of 150gm. The result is AMAZING! The best muffins I ever made! Thank you so much! 5*!!!

We did with chocolate chips but than less sugar is a must 😉 amazing recipe…you can swap regular oil to coconut, use unsweetened plant milk and stevia insted sugar and you have very healthy very low kcal option! It's a recipe that unlike other through net always comes out perfect! So quick and easy! Thank you! xxx

  30. This recipe for blueberry muffins seems very easy to follow. But I have a question. Do you necessarily have to use a 12 cup pan for just 8 muffins and full the remaining 4 cups with water?
